We were fortunate to partner with The Trafalgar Club from Oakville, Ontario to use their small batch Barrel Aged Rye.
This small batch barley and rye spirit from award-winning Trafalgar Club is matured in small, charred barrels made in Ontario from Ontario oak and represents approximately 20% (by volume) of the mustard. The spicy flavour of brown mustard seed from western Canada is balanced with the sweetness of Ontario maple syrup.

The Trafalgar Club in Oakville, Ontario has been brewing premium quality craft beer for many years.
In April, 2015 The Trafalgar Club won three gold and three silver medals at the Ontario Brewing Awards. Those prestigious awards were followed up with a solid bronze medal in June, 2015 at the Canadian Brewing Awards.
In 2013 the brewery decided to expands its operations, and also flex its creative muscle, by installing a copper still to create small batch, artisanal spirits.
One of the exciting products to be produced by the new still was their Barrel Aged Rye. This spirit is the classic blend of 80% barley with 20% rye, which adds a hint of spice and complexity – a distinctly Canadian flavour profile.
This rye and barley spirit is aged in small, charred oak barrels made in Ontario from Ontario oak. Small barrels are more expensive but provide a higher ratio of wood surface area to liquid resulting in plenty of flavour and smoothness in a relatively short period of time.
Canadian Brown Mustard Seed
Commonly used in dijon, deli mustards and South Asian cusisine.
Brown mustard seed is widely considered to offer the best balance of heat to flavour of the three varieties of mustard seed.
